Today we cooked our scrumptious zucchini pineapple bread! It is everything you would imagine it to be except for those skeptics that think GROSS!!!
Look at that! It has beautiful color, wonderful texture, it’s moist and you are sure to LOVE it!
Let’s start with the ingredients
Zucchini Pineapple Bread!
3 Cups Flour
2 Tsp Baking Soda
1 Tsp Salt
1/2 Tsp Baking Powder
2 Tsp Cinnamon
1 1/2 Cup Sugar
2 Cups Zucchini Grated
1 Cup Crushed Pineapple
2 Tsp Vanilla
Prep time about 20 minutes/ Bake time 55 minutes/ Yields 2 8X5 loaf pans
You’re going to start by preheating your oven to 350 degrees and buttering and flouring your loaf pans.
In a large mixing bowl combined Sugar, Eggs, Cinnamon, Baking Powder, Baking Soda, Vanilla and Salt.
In a separate large mixing bowl take sugar mixture and fold into the flour. Add 1 cup crushed pineapple in juice. Add 2 cups zucchini. With an electric mixer or by hand combined until everything is the same consistency.
Bake at 350 degrees for 55 minutes or until toothpick comes out clean.
