Chocolate Changes Everything

Hey Everyone!

Welcome back, or as always welcome for the first time if you’re just finding us! Today on the homestead we are battling a 103 degree heat index today, which for some of you in other parts of the country isn’t horrible and may actually be a relatively mild summer day in August, but for those of us here at home in New England that is scorching!

The other day I told you all about our Zucchini Pineapple Bread and I shared with you a recipe that I was handed down from my Nana Alice.  So we asked what are some other great recipes that you had or wanted to try that you thought we should do here at the homestead and we’ve listened! As part of that our featured recipe today is Zucchini Brownies which just proves that CHOCOLATE REALLY DOES CHANGE EVERYTHING!


Some years back Jerry Seinfeld’s wife Jessica released a cookbook called Deceptively Delicious, in which she showcased multiple recipes to sneak vegetables into your children, or picky eater’s diet.  Now while she didn’t specifically have one for Zucchini Brownies for us to try, she did have one for Zucchini Cupcakes which may just might have to try another day! Our recipe today actually came from a vegetarian friend of mine named April.

Let’s get started!

Prep: About 20 Minutes
Bake: 25 Minutes ( I found that for me 35 Minutes was better)
Yields: 24 Squares
1/2 cup applesauce
2 small or medium bananas mashed
1 1/2 cup sugar
2 tsp. vanilla extract
1/2 cup cocoa powder
1 1/2 tsp. baking soda
1/2 tsp salt
2 cups finely shredded zucchini
2 cups all purpose flour
1/2 cup walnut pieces (Optional)
Preheat oven to 350 degrees F. Butter and flour an 9×13 inch baking pan, I actually did this with cocoa so that my brownies wouldn’t get that white layer.   In a large bowl, mix together the applesauce, mashed bananas and sugar. Add vanilla and cocoa and mix together. Then add baking soda, salt, and zucchini and mix together. Add flour and walnuts (optional) and mix together. Pour into pan then bake for 25 minutes until brownies spring back when gently touched.
I am so excited about these, they came out fabulously! They taste fantastic, and best yet the kiddos really do love them!!
